Grain To Glass
How We Make Our Spirits
Every step, from grain to glass, happens in our Longmont distillery.
01
The Longmont Journey
Mash
We cook grains with water to make their starches available. Enzymes break those starches into sugars that yeast can use.
Grain, water and the start of something good.
02
The Longmont Journey
Ferment
Yeast turns the sugars into alcohol, creating a beer like wash. Fermentation builds the flavors that carry into the spirit.
A living process. A spirit taking shape.
03
The Longmont Journey
Distill
Our copper pot still heats the wash and collects the vapor as it condenses. We select the heart of the run for its character. The spirit comes off clear.

04
The Longmont Journey
Barrel
Whiskey goes into charred white oak. The wood and char begin shaping its color, aroma and flavor.

05
The Longmont Journey
Time
At 4,979 feet, Colorado's changing climate works on the barrel. Temperature changes move spirit into and out of the wood. Patience does the rest.

06
The Longmont Journey
Bottle
When the spirit is ready, our crew draws it and bottles it by hand. The journey ends with a bottle ready to share.
